Mozzarella in Carrozza (Fried Mozzarella Sandwiches) is a traditional preparation with mozzarella cheese from Campania and Lazio (like Potato Gateau and Gnocchi alla Sorrentina). It was born as a dish that recuperates the leftover mozzarella cheese.
It is composed of sliced bread filled with mozzarella cheese. The bread is cut into triangles or rectangles, passed into the egg and then fried, a real pleasure in practice.

To prepare the Mozzarella in Carrozza, start by cutting the mozzarella in slices of about half a centimeter, put it to drain in a colander in order to eliminate the preservation liquid (the whey).
Take the slices of bread and first remove the crust. Cut them by oblique to form two triangles. Place the mozzarella slices on the half of the triangles obtained, making sure that the mozzarella does not come off the edge of the bread.
Beat the eggs in a bowl and lightly moisten the edges of the stuffed bread with the help of a brush. Cover the bread triangles with the other half, applying some pressure with your palms to seal the edges well.
Pour the flour into a bowl and the breadcrumbs in another bowl. Pour the peanut oil into a pan, bring it to a temperature of 170-180 ° C. Pass the sandwiches, first in the flour, then in the beaten egg and finally in the breadcrumbs. This will create a sticky compound that will prevent the mozzarella from coming out during cooking.
Dip the sandwiches in the boiling oil and cook until evenly browned and complete on both sides.

The mozzarella should preferably be a fiordilatte that you have had in the fridge for a few days, so that it is more compact and has much less liquid.
For a lighter version, mozzarella in carrozza can be baked in the oven. Preheat the oven at 180 ° C and cook for about 15 minutes, turning the rolls halfway through cooking. Take care to put them in a baking pan lined with parchment paper to prevent them from sticking to the baking sheet.
