3 Best Italian Recipes On Cast Iron Griddle
Grilling means using a cast iron pan or other material as a cooking method that allows you to prepare very tasty main courses. The cast iron pan is used for the type of cooking called grilled. The name of this type of cooking comes from the old kitchens of the past. With the old stove you could cook meat or other food directly on the hot surface. 1. GRILLED SAUSAGES AND POLENTA

2. GRILLED SQUID
Grilled Squids (Calamari) is a great, delicious, healthy and easy to make dish of the Italian and Mediterranean culinary tradition. This cooking method leaves the squid all its flavor and its texture soft. We prepared them using a cast iron griddle, the best for this kind of cooking method. Important for this recipe is the preparation of a simple sauce made with oil, garlic, parsley and lemon, to accompany the squids.
To prepare Grilled Squids (Calamari) first of all it’s fundamental to clean well the squids. Wash the squids, empty them, discard the transparent cartilage, the fin, eyes and beak and the skin of the head-bag. Separate the tentacles from the central body and make incisions on the body taking care to leave it whole. These incisions are important to allow the water contained in the squid to leak during cooking, so that they can cook at higher temperatures, without boiling the inside. Preheat the cast iron griddle and cook the squids for 6/7 minutes on each side. Season them with a sauce mad with extra virgin olive oil, garlic, parsley and lemon. Enjoy!
3. GRILLED SCAMORZA CHEESE WITH ROASTED POTATOES
Grilled Scamorza Cheese (or Provola) is a very fast and tasty second course, which will appeal to lovers of stringy cheese and grilled cooking but also to the whole family. A simple and irresistible recipe, to prepare in few minutes. We suggest to accompany it with roasted potatoes cooked in the oven.
To make grilled scamorza cheese, cut the scamorza into slices of about 2 centimeter. Arrange them on a tray and put them in the freezer for 5-10 minutes. Cook for about 1 minute on each side on the preheat cast iron griddle, turning them only once. Lift them with a spatula and arrange them on a plate.The scamorza will be ready when it begins to melt and a golden crust has formed on the surface: in this way it will be crunchy on the outside and stringy inside.
